  • 8 pieces cherry tomatoes
  • 8 ounces fresh mozzarella balls (bocconcini or ciliegine) preferably mini size
  • 8 pieces black olives pitted
  • optional balsamic glaze for drizzling

Method
 

  1. Thread a cherry tomato onto a skewer or toothpick as the base.
  2. Place a small mozzarella ball on top of the cherry tomato, gently pressing to secure it in place.
  3. Pick a black olive and carefully slice it in half lengthwise to create an oval shape for the 'pupil.'
  4. Use a tiny dab of pesto or olive tapenade to attach the olive half onto the mozzarella eye, positioning it as the pupil.
  5. Repeat the assembly process with the remaining ingredients, creating as many Eyeball Bites as desired.
  6. Arrange the assembled bites on a serving platter and, if desired, drizzle lightly with balsamic glaze for an extra spooky effect.
