Ingredients

  • 1 cup fresh lemon juice Chill before blending for best freezing results
  • 1 cup granulated sugar Adjust to taste
  • 2 cups cold water Chill in the fridge beforehand

Equipment

  • Blender
  • Freezer

Method

  1. Measure out fresh lemon juice and ensure it's well chilled for quicker freezing and better texture.
  2. Add the lemon juice, granulated sugar, and cold water into your blender.
  3. Blend the mixture on high speed for about 30 seconds until the sugar dissolves completely and the mixture is smooth and slightly frothy.
  4. Pour the blended mixture into a shallow, freezer-safe container, spreading it out evenly.
  5. Place the container in the freezer and let it sit for about 1 hour, checking occasionally. Use a fork to scrape and break up any ice crystals, creating a coarse, granular texture.
  6. Repeat the scraping process every 30 minutes for 2-3 more times to develop that snow-like, granular consistency.
  7. Once the mixture looks fluffy and snow-like, scoop it into glasses or bowls, ready to serve immediately for the best texture.

Notes

For an extra flavor twist, stir in fresh berries or herbs before freezing. To keep the texture perfect, serve immediately after scraping for that icy, granular feel.
