Pineapple Mint Popsicles

Ingredients
  

  • 2 cups fresh pineapple chunks ripe and fragrant
  • 1 teaspoon lemon juice freshly squeezed
  • 2 tablespoons honey adjust to taste
  • a handful fresh mint leaves finely chopped

Equipment

  • Blender
  • Popsicle molds
  • Ice pop sticks
  • Warm water bath

Method
 

  1. Place the pineapple chunks into a blender, add the lemon juice and honey, then blend until you get a smooth, fragrant mixture. It should be bright yellow and slightly frothy.
  2. Finely chop the mint leaves and stir them into the blended pineapple mixture, distributing evenly for bursts of herbal freshness.
  3. Pour the mixture into popsicle molds, filling each about three-quarters full to allow room for expansion. Tap the molds gently on the counter to remove air bubbles.
  4. Insert the sticks into the molds, making sure they stand upright and are centered. Place the molds in the freezer and let them chill for at least 4 hours or overnight for best results.
  5. Once frozen solid, run warm water over the outside of each mold for about 10-15 seconds to loosen the popsicles. Gently pull on the sticks to unmold them.
  6. Serve immediately for a refreshing treat, or wrap individually in plastic wrap and store in the freezer for later enjoyment. Let sit at room temperature for a minute before biting into for the perfect icy texture.
